Preserving Iraq's National Dish
Preserving Iraq’s national dish, masgoof, post Saddam Hussein wasn’t an easy journey. The marshes of southern Iraq has provided the people with fish for decades. Carp, being the most popular fish goes back to when this area was apart of Babylonia. Due to decades of war invasion and political instability, it has devastated the countries waterways but fish still has a place in Iraqi culture. The main thing that has changed is how individuals get it.
In the 90’s, Saddam Hussein drained the marshes, the middle east’s largest wetland as a military strategy to control his opposition. In 2003, the water returned but it wasn’t the same. The water from the marshes flows down south to basra, Iraq’s fish capital. In 2018, the water was abhorrent and over 100,000 individuals were hospitalized due to water contamination. Although the marshes went through a couple decades of hardship, masgoof is still the most popular Iraqi dish.
